Rich, sweet Koshu

The juice is cooled, the frozen water is separated, and the juice is fermented.
The resulting juice has a high sugar content and acidity, so it is made sweet to balance the flavor, resulting in a rich, honey-like sweetness.

After more than 20 years of bottle aging , the cork had become damaged, so it was rebottled in March 2021 .
