For the barley used in shochu production, we ask local farmers to grow it and then purchase all of the harvested barley for use as raw material.
Local water, agricultural products as raw materials, climate and local traditions, and deep trust with the community are intricately intertwined, ensuring that the brewers pass on the sake brewing tradition, a cultural industry, to future generations.
