In 1984, six sake breweries gathered to form the Iki Shochu Cooperative Association. In 2010 , in hopes of further growth and the development of Iki shochu, the company name was changed to "Iki no Kura Sake Brewery."
While preserving the traditional techniques passed down since the 16th century, they boldly take on new challenges such as vacuum distillation and flower yeast preparation, continuing to pursue the deliciousness of Iki shochu.
