[Domaine Ponkotsu Jalopy 2023 ]

Delaware made with Chenin Blanc, Sauvignon Blanc, Petit Manseng and Pinot Gris.

Delaware grapes harvested in August are de-stemmed and crushed, then fermented in tanks.
During fermentation, Chenin Blanc and other grapes (mizuguchi) are placed on the bunches and left for several days to undergo MC, and then 10 days later they are pressed together with Chenin Blanc and other grapes that have been harvested separately.
The wine is then blended and fermented in old barrels to complete the process.

The 2023 vintage is characterized by strong fruitiness that evokes the heat and a salty flavor that comes from aging.
Strong Delaware flavor.
There is a slight hint of volatile acidity on attack, but it quickly blends into the mouth, and it is fun to watch the aroma change from Delaware to an aromatic Muscat-like aroma on the aftertaste.
