The long-awaited third installment of the rapidly popular "Oku THE MOON" series has arrived.
The theme for this release is "Wakamizu," a sake rice from Aichi Prefecture.
This series is brewed by the 24-year-old 6th-generation brewery owner, Mr. Masayuki Yamazaki, who aims to maximize the unique characteristics of each sake rice. While the previous Yamada Nishiki release pursued a "balance of body and acidity," this Wakamizu edition is crafted with the theme of light, refreshing notes that pair perfectly with the hot season.
This year, we revisited the ultra-dry profile of last year and tuned the sake to a slightly dry quality that aligns with the series' overall consistency.
Even so, it remains the lightest and most approachable flavor in the series.
Rising from the glass are refreshing aromas reminiscent of French pear, Muscat grapes, and kiwi.
Furthermore, a succulent acidity that brings to mind pink grapefruit spreads pleasantly.
On the palate, a delicate, fine carbonation unique to "origarami" (sake with sediment) accompanies a soft, transparent umami that gently unfolds.
While it offers a luscious fruitiness like biting into a French pear, the carbonation and acidity pull the profile together for a remarkably smooth finish.
Without any bitterness or off-flavors, it naturally beckons you to take the next sip.
