[Soreiyu Merlot 2020 Diary]

Made from 100% Merlot grown in our own vineyards in the Yahata and Iwate districts of Yamanashi city.
Only the ripest bunches are carefully selected and harvested, then carefully brewed and aged for 2-3 years in French oak barrels and bottles.
The grapes are gradually crushed while still round during maceration to bring out their natural fruitiness. They are then aged in barrels for nine months.
The aroma of concentrated prune syrup, ripe black cherries, leaf mold and pine cones rises up in the air.
On the palate, there is still a mild acidity, and along with the aroma of truffles that subtly passes through your nostrils, the black cherry-like fruitiness spreads smoothly, with a slightly bitter cigar nuance in the aftertaste.
Along with wasabi, it goes well with beef steak, roast beef, stewed beef or pork, and yakitori sauce.
The best drinking temperature is around 16°C.

Over the 20 years since planting their own vineyards, Kyokuyo Shu has pondered over the unique flavor of their Yamanashi wines, and has decided that rather than striving to record high quality wines, their goal for the next 20 years of winemaking is to faithfully record the progress of their wines year by year.
The concept of this diary series is to record each year's wine, capturing the various landscapes that occur during winemaking.
