An exquisite balance of deep richness and moderate aroma.

Made using 100% Akita Sake Komachi and 50% polished rice.
It is a junmai daiginjo sake with a well-balanced flavor, with the light taste that is characteristic of Akita sake komachi, and the splendor and softness unique to hanging squeezing.

Tsurushi Shibori is different from the usual method of squeezing under pressure, in that the unrefined sake is put in a sake bag and hung in a tank.
It is a very luxurious technique to collect only the dripping liquor from the liquor bag by gravity.
Hanging squeezing takes time and effort, but because it is squeezed without applying any pressure, it is finished with a clear taste without any unpleasant taste.
