Hakutsuru Nishiki is a new sake rice that was created by crossing the mother variety Yamadaho and the father variety Watarifune.
It is the only sibling variety of the overwhelmingly popular Yamada Nishiki, the king of sake rice.
Compared to Yamada Nishiki, the grains and white core are larger, and the amount of protein is lower, comparable to Yamada Nishiki, and the finished sake tends to have a refreshing aroma and gorgeousness, and a soft and gentle taste.
