This is the original brand of Hiroaki Katayose, who served as the production and brewing manager of Domaine Tetta!

This wine uses high-quality Pinot Noir from grape farmer Endo Saichi of Kaminoyama City, Yamagata Prefecture.
This Pinot Noir was harvested very nicely, and although the extreme heat meant that about 10% less juice was extracted, the skin was thick and the seeds were ripe.

We felt it would be a waste to produce these wonderful grapes in an ordinary way, so we left them for a long maceration period of two months to bring out not only the tannins from the skins, but also the tannins from the seeds.

It already has a mature feel, with a color and flavor that suggests it has been aged for several years.
It's a variety that we don't know when we'll be able to share in the future.
