In 2025, Naoto Odaka, owner of the popular restaurant "grege" in Hachioji, Tokyo, began training at Al Fiore to deepen his winemaking experience.
From their discussions, a fresh, slightly sparkling style was born, inspired by Portugal's renowned Vinho Verde.
Seyval, known for its lightness and refreshing acidity, was chosen as the grape variety and vinified based solely on this image.
As a result, the 2025 vintage of "Ame nimo Makezu" offers a refreshing expression in the Vinho Verde style, different from previous years.
Serve chilled and enjoy casually. It's perfect as an aperitif, and also pairs well with light appetizers and seafood.
Fattoria AL FIORE produces wine in Miyagi Prefecture, in a renovated former school gymnasium. They aim to "continue to be a wine that expresses the grapes as they are," striving for a wine that, while not superficially impactful, conveys its inherent goodness purely as you taste it. They produce natural wines without added sugar or acid, without antioxidants, and unfiltered, in a natural style.
