This Junmai Daiginjo is made from Gohyakumangoku sake rice polished to 45% or less.
It has a good balance of aroma and flavor, with a refreshing finish characteristic of Gohyakumangoku.
It pairs well with dishes such as sashimi and grilled fish, making it an excellent Junmai Daiginjo for meals.

Founded in Meiji 5 (1872). It began in Akadomari, Sado.
Hokusetsu Sake Brewery started brewing sake as a calmly situated brewery by the sea in a small port.
Through the Meiji, Taisho, and Showa eras, in Showa 23 (1948), Hazu Shuzojo Co., Ltd. was established.
In Heisei 5 (1993), the company name was changed to Hokusetsu Shuzo Co., Ltd., which it remains today.
Since its founding, the brewery has inherited and preserved skilled techniques.
At the same time, it has successively incorporated new and unprecedented "moves" such as musical performances, ultrasonic vibrations, and centrifuges, pioneering a new era of sake brewing with innovative methods. Indeed, it is this combination of tradition and innovation that defines Hokusetsu Sake Brewery as a challenger.
