A limited-edition sake brewed by a surging young Toji!
Housui is a "little-known premium sake" from a small brewery with a total production of 450 koku, with about 80% of its sake shipped to Tokushima, its hometown, and Kagawa Prefecture.
After the sudden passing of his father, the previous owner, the 5th generation, Taichi Baba, who had been training at a liquor store in Tokyo, rushed back to the brewery and became president at the young age of 27.
He is a dynamic young Toji who also appeared in this year's "Young Toji's Dawn."
Within a gentle and subtle initial aroma, a crisp, mineral-like nuance reminiscent of Japanese pear, melon, and lime spreads, and a calm fruit aroma like quince and loquat can also be detected.
The mouthfeel is fresh and somewhat firm, with a very slight fizziness.
After a faint fruitiness and sweetness, the mineral nuance detected in the aroma and a gentle bitterness create an impression that tightens the overall profile nicely.
It pairs exceptionally well with simple, salty dishes that bring out the natural flavors of the ingredients, such as white fish cured with konbu, sashimi, salt-grilled fish, or tempura and yakitori (salt).
