Kyoheido 2025 Winter Release Red - Limited to Yamanashi Prefecture

This is the 2025 Merlot. Maceration carbonique was performed in stainless steel tanks for approximately one month, followed by secondary fermentation and aging in medium barrels.

From the glass, aromas of currants and ripe strawberries mingle with elegant floral notes reminiscent of acacia and roses. These are further layered with nuances of cherry tomatoes and buttered toast, along with complex scents of macadamia nuts and citrus peel.
The palate is smooth, revealing nutty richness and dried fruit flavors. In the finish, fruit and floral aromas gently waft through the nose, leading to a long, semi-dry aftertaste.

After approximately one month of carbonic maceration in stainless steel tanks, the wine is fermented and aged in medium barrels, resulting in a finish that combines lightness with depth.
When enjoyed in a slightly narrower glass, savory notes like roasted green tea also stand out.

It can be enjoyed deliciously even at low temperatures, and as the temperature rises, it develops a richer character.
It pairs well with hearty dishes such as beef and game, excellent with a steak with fruit sauce, roast beef, beef-wrapped burdock, and also with carrot salad and glazed carrots.
