This "Wataribune" rice, which even conveys a sense of dynamism, is a very rare sake rice born in Shiga Prefecture, where Kitajima Brewery is located.
It is the paternal ancestor of Yamada Nishiki and is characterized by its very expansive flavor.
The dynamism is fully conveyed even from the mouthfeel, but that dynamism is deliberately led to a different taste from the sparkling atmosphere of kimoto brewing.
By warming it even further than body temperature, it offers a slight sweetness and a pleasant sharp, lactic acidity that can be enjoyed with food.
It pairs particularly well with all types of Japanese cuisine, especially white fish sashimi, grilled fish, and yakitori.
