About Sasaichi Shuzo
Located in Otsuki City, Yamanashi Prefecture, it was founded in 1661 as Hanadaya.
Amano Hisashi, who later inherited Hanadaya and became the first brewery owner, renamed it Sasaichi Shuzo in 1919, giving it a history of over 300 years.
The brewing water used is groundwater originating from Mount Fuji that flows through the brewery's location. This water was chosen by Emperor Meiji to be carried with him when he traveled from Tokyo to Kyoto, and is called "Gozen Mizu" (Imperial Water).
The brewery places great importance on its relationship with food, and instead of emphasizing its individuality, it determines its flavors based on its perception of sake as a beverage.
