This is Shichiken's standard sake, characterized by careful brewing, a crisp, fruity flavor from local rice, and a light acidity. Made with the sake rice "Yumesansui."
It is a well-known crossbreed of Yamada Nishiki, characterized by its ability to bring out a mellow taste and the umami of rice.
To achieve a refreshing palate and a light ginjo aroma, we manage a careful, long-term low-temperature fermentation.
While not flashy, its reliable quality makes it a beloved standard junmai ginjo in the local area.
