A project to support sake breweries affected by the Noto Peninsula Earthquake
"Don't Stop Noto Sake!" collaborative brewing sake
This sake is part of the "Don't Stop Noto Sake!" project, which aims to support sake breweries affected by the Noto Peninsula Earthquake earlier this year.
The affected sake breweries in Noto suffered extensive damage, making sake production difficult for several years to come.
Therefore, this project involves sake breweries nationwide collaborating to produce sake, with the aim of maintaining distribution for the affected breweries.
...The following is a message from Mori Shuzojo...
Our company is participating in the "Don't Stop Noto Sake!" project, which supports sake breweries affected by the Noto Peninsula Earthquake earlier this year.
Our collaborative brewing partner, Tsuruno Shuzoten, had its brewery completely destroyed in the disaster, but they are looking forward to rebuilding and resuming sake production in the same Noto location.
The sake we are introducing this time is "Taniizumi Original," a product that faithfully recreates the recipe of Tsuruno Shuzoten's brand, "Taniizumi," here at our brewery.
For the rice, we used the precious Yamada Nishiki that was rescued from the completely destroyed brewery.
During the brewing process, Mr. Shintaro Tsuruno, the head of Tsuruno Shuzoten, came to our brewery and worked with us.
During our work together, Mr. Tsuruno said, "I thought I wouldn't be able to make sake anymore, so I'm just happy to be making sake right now."
Hearing those words made me realize again how fortunate we are to be able to make sake as a matter of course, and it was a good opportunity for me to express gratitude for our daily lives and return to my original intentions in sake brewing.
This sake was made for the future of Tsuruno Shuzoten.
The amount of rice is small, so the quantity is very limited, but we wanted to introduce it this time in hopes that everyone on Team Hiran will also support it.
