This Daiginjo is brewed from Yamada Nishiki rice grown in Hyogo Prefecture, polished down to 35%.
It features a fruity aroma and a clean finish.
We recommend serving it chilled at 5-15℃, but it is also delicious when served lukewarm.
・From the Tanizakura Shuzo official website
It is said that the taste of sake comes from the rice, the aroma from the yeast, and the mouthfeel from the water quality.
At Tanizakura, we mill all the rice used for sake brewing in-house, starting from the brown rice. We then polish off approximately 40% (on average) of each grain to remove impurities that can cause off-flavors in the sake. The water that springs forth from our deep well is subsoil water from the Yatsugatake Southern Foothills Highlands spring water group. The combination of these blessed natural resources and the skill of our brewers gives birth to Tanizakura sake.
