・Founding and History
Founded in 1875. By 1895, it was producing 1,700 koku, ranking among the top three breweries in the prefecture. Although operations were temporarily suspended due to war, the focus remained solely on sake brewing.
A significant transformation occurred in 1988 with the appointment of Junichiro Aihara as representative.
He thoroughly committed to "quality first," aiming to brew sake he himself would enjoy, and the brewery was reborn as a ginjo brewery.
・Origin of "Ugonotsuki"
The brewery's signature sake, "Ugonotsuki" (Moon After the Rain), was named by the second-generation owner, Kakuh Aihara, from a short story title in "Nature and Life," an essay published in 1900 by the novelist Tokutomi Roka.
"A bright, shining moon illuminating its surroundings clearly after the rain." This name is a constant goal for the brewers, aspiring to create such a clear and beautiful sake.
