Kyo-eido 2025 Carefully Crafted Spring Release Red
Primarily MBA harvested in September 2025. Approximately 2 weeks of MC, followed by about 4 months of fermentation and aging in medium and small barrels.
A slightly reddish azuki bean color.
A flamboyant aroma of mulberries, jasmine, and acacia, with nuances of melon, pear, and ripe lemon. Furthermore, tomato, mint, and a subtle toasted aroma are complexly layered.
The mouthfeel is moist, with a fruity taste of melon and banana, and a slight effervescence that spreads pleasantly on the tongue.
The flavor has a solid volume, with spices like cinnamon and nutmeg, the richness of cashew nuts and almonds, and the sweetness of dried apricots and a hint of honey.
The aftertaste lingers with a hazelnut-like aroma and a gentle sweetness.
Even when well-chilled, the aroma and flavor can be enjoyed richly. It is recommended to use a slender glass to enhance the aroma, but also to enjoy it leisurely in a regular cup.
Pairings go well with a wide range of Chinese dishes, from Green Pepper Steak (Qīngjiāoròusī) to Shrimp in Chili Sauce (Ebichiri). It also pairs well with dried snacks like jerky, and dried filefish with mirin.
