This koikuchi (dark) whole soybean raw soy sauce is made using traditional methods with domestic soybeans and wheat, and still contains active enzymes.
With the richness and sweetness derived from mirin, it has a flavor perfectly suited for Japanese cuisine.
Experience its wonderful aroma and clear, wine-like reddish hue.
・From the Yonebishi Soy Sauce official website
A storehouse-style building blends into the old streets of Hitachiota. Yonebishi Soy Sauce, founded by inheriting a sake brewery, has been producing authentic soy sauce with a commitment to traditional methods in this area since 1800 (Kansei 12). In 1867, their refined soy sauce "Hinagiku" received a bronze medal at the Paris World's Fair. "Yonebishi" is derived from the company's founding name "Yoneya." The Yonebishi logo mark is shaped like the character for "rice" (米) and also expresses the wish for "Beiju" (longevity, literally "rice-age").
