Hasshinho refers to the collective name for the eight large and small peaks on the summit of Mount Fuji.
It has a mellow flavor with a rich taste.

In 1790 (Kansei 2), the first head of the family, Hachigorō Yorozuya, opened a sake brewery at the current location. The sake's name at the time was "Ichiriki Masamune." However, in 1932 (Showa 8), Akiko Yosano, a poet who was a close friend of Junji Nakagomi, a French literary scholar and the younger brother of the sixth head of the family, Minoru Nakagomi, visited the brewery. She composed a poem, "Like visiting Horyu-ji Temple, the sake of Kai, Shunnoten, is brewed in this brewery." From then on, the sake's name was changed to "Shunnoten."
The brewing water used is the somewhat hard subsoil water from Mt. Kushigata, the southernmost tip of the Southern Alps, and cold brewing is mainly carried out for Junmai sake.
Shunnoten's flavor is a slightly dry type with a soft umami accompanied by a faint, elegant acidity.
As its name suggests, its charming, gentle flavor evokes the spring of Kai, a mountainous country.
