This bottling uses the "seme" portion, which comes after the "nakadori" (middle press) in the pressing process.
While the "seme" is often described as having a rougher character, due to the high milling ratio, this sake offers a pure rice sake with a full body enveloped by the fresh ginjo aroma typical of new sake!
From the back label:
Tenpoichi is located in a warm region in Kamiage-cho, Fukuyama City, in the eastern part of Hiroshima Prefecture, facing the Seto Inland Sea.
The "brewing water" used for sake production is soft water (ancient water) drawn from 200m underground at our brewery.
With the motto of being a superb supporting actor that enhances food to the maximum, we aim to produce sake that does not interfere with meals. We value the umami and acidity that spread in the mouth and the crisp finish. Our koji is entirely made using our original box-koji method, carefully fermenting each grain.
We hope that everyone who drinks our sake feels "happiness."
