High-level super dry sake

This is a super dry Tokubetsu Junmai sake that retains the umami of rice while having a sharp, crisp finish.
It has a gentle aroma, and when you take a sip, the umami of the rice spreads smoothly across your palate.

The refreshing acidity tightens the overall flavor, with no off-flavors, and the taste expands moderately.
It is characterized by a light, refreshing aftertaste that makes it easy to drink continuously without getting tired, showcasing its excellent balance.

The flavor doesn't change whether served chilled or at room temperature, making it an excellent pairing with meals.
As Aihara Shuzō's proudest dry sake, it adds a touch of sophisticated crispness to any dining table.

・Founding and History
Established in Meiji 8 (1875). By Meiji 28, it was brewing 1700 koku, ranking among the top three in the prefecture. Although temporarily closed due to war, it has always been dedicated to sake brewing.
A major change occurred in 1988 with the appointment of Junichiro Aihara as representative.
He thoroughly implemented "quality first" with the desire to brew delicious sake that he himself would enjoy, transforming it into a ginjo brewery.
・Origin of "Ugonotsuki"
The brewery's representative sake, "Ugonotsuki," was named by the second generation, Itaru Aihara, after a short story from the essay "Shizen to Jinsei" published by novelist Roka Tokutomi in Meiji 33 (1900).
"A clear and beautiful moon that shines brightly in the sky after the rain, illuminating its surroundings" - this is the goal that the brewers constantly strive for: to brew such a pure and beautiful sake.
