Annou potatoes are a specialty of Kagoshima and are known for their roasted sweet potatoes.
The Annou sweet potatoes and Fukuoka Prefecture-grown sake rice "Yumeikken" are used for the koji rice, which is brewed in a Japanese earthenware jar.
During storage after distillation, the filtration process is done without using any machinery; only the excess oil is removed by hand.
