・About Awamori
Awamori has four main characteristics:
1. Rice is used as the raw material.
2. Use black koji mold.
3. The brewing process is done just once using all the koji .
4. Distill in a pot still.
Awamori has the great appeal of being able to age. Whiskey and wine also have vintage items, but if you take good care of awamori, it can grow into a 100 or 200 year old liquor in your own home.
There are very few examples of this type of sake in the world. Almost all of the sake over 100 years old was lost during World War II, but even sake aged 20 or 30 years after the war is highly valued for its mellow flavor and sweet aroma.
