Made with Cabernet Sauvignon from sandy soil in our own vineyard.

Four distinct winemaking methods—whole cluster, carbonic maceration, cold maceration, and a special method of activating lactic acid bacteria before fermentation—are performed in separate tanks. The wines are then blended during pressing.

This wine actively generates substances often considered off-flavors, resulting in a taste irresistible to those who appreciate it.
The nuance of MC, the green notes of whole clusters, the darkness of reduction, the vibrancy of acetic acid, a subtle hint of brett, and the elegance inherent to the varietal. Various elements intertwine, with aromas spreading from the glass to the palate. The lingering finish slowly unfolds.
