From the storehouse
Founded in the Edo period, we use extremely soft water drawn from the Ryujin well dug within the brewery as our brewing water, and with flexible thinking, our experienced staff brewers take the lead in brewing our special sake.
We strive to make sake that brings out the individuality of sake rice varieties such as Yamadanishiki, Omachi, Gohyakumangoku, and Aizan, aiming to produce a rich, delicious type of sake that allows you to taste the natural flavor of the rice.
What we focus on most is the traditional techniques unique to sake and the sensibilities of the people who use those techniques.
We believe that the important thing about "handmade" sake is not how much effort is put into it, but where and why the effort was put into it. While we continue to brew sake in the traditional way, we are always striving to make even better sake, incorporating new methods and innovations.
