Wakashio Shuzo, the brewery behind "GLOW EP05," which achieved three consecutive victories and its first induction into the Hall of Fame at Japan's largest imo shochu contest, the "Shochu Grand Prix," has announced a new series exclusively for special retailers: "WAKASHIO+."
The concept of WAKASHIO+ is a daring project that brings together Wakashio Shuzo's technology and free-thinking ideas, unconstrained by conventional shochu brewing, encompassing methods, ingredients, world view, and production volume.
The first product born from this initiative is "Kura no Kokorozashi."
Though Kura no Kokorozashi celebrated its 10th anniversary last year, its concept has been revamped for a fresh start, pursuing the ultimate expression of beauty as an imo shochu.
Using Kumamoto yeast (Kyokai No. 9), known for igniting the popularity of ginjo-shu with its elegant aroma, and double the usual amount of rice koji, it undergoes slow, long-term fermentation at low temperatures.
Refined through vacuum distillation, its aroma and umami deepen over time.
It features a gorgeous aroma reminiscent of tropical fruits, notes of charcoal, a refreshing acidity, and a gentle sweetness reminiscent of citrus preserved in honey.
