Made with Delaware, Chenin Blanc, Sauvignon Blanc, Petit Manseng, and Pinot Gris.

The Delaware harvested in August was destemmed, crushed, and fermented in tanks.
During fermentation, Chenin Blanc and other grapes (from Mizuguchi) were placed on top of the bunches for a few days of carbonic maceration, and then pressed 10 days later with other separately harvested Chenin Blanc grapes.
The blended fermentation was then completed in old barrels.

All the harvested grapes were slightly overripe, resulting in a wine that showcases this characteristic.
The aroma of ripe fruit is prominent, with notes of plum, baked apple, and coffee.
The acidity is lower than usual, but it has a clear impression.

This is a bottle whose future evolution with further aging is eagerly anticipated.
