Made using fully ripe Koshu grapes harvested in Katsunuma Town, Yamanashi Prefecture.
The aroma is extracted through a short period of skin contact (immersing the skin in the juice to extract components from the skin) and low-temperature fermentation.
And by finishing the sake unfiltered, we are able to bring out the full potential of the Koshu grapes.

The Koshu variety's characteristic aroma and rich acidity go well with Japanese cuisine, especially soba noodles and light dashi stock.
A gentle white wine that you'll want to drink every day as part of your daily meals.
