A light and clear orange wine
This amber wine is made using two aromatic grapes, Shine Muscat and Niagara.
Shine Muscat is fermented using whole bunches of Shine grapes that have been lightly crushed, and then another bunch of Shine grapes is laid on top and the fermentation is continued slowly for about two weeks.
Shine Muscat grapes are difficult to crush, so instead of punching down the grapes, they are crushed by hand and blended into the mash.
Although the grapes are grown with seeds, there is a mutation that results in a large number of seedless grapes, so the grapes are grown whole bunches and pressed strongly to give the wine a gentle astringency and bitterness.
Although it belongs to the orange/amber wine category, its color is pale and closer to yellow.
Kanda Vineyard is a historic winery founded in 1903. They carefully brew their own grapes, taking advantage of the Sanriku climate, to produce wine with a natural flavor.
The wine is made using a production method that minimizes the use of antioxidants and is also committed to traditional barrel aging, resulting in a finish that respects the original characteristics of the grapes.
