The koji rice is Akaiwa Omachi, polished to 50 %, and the rice used is Hattan Nishiki, polished to 60 %.
It has the exact same specifications as the special junmai sake, but is made dry by manipulating the koji and moromi mash.
Rather than being a "spicy" drink, it has a dry, crisp flavor with a savory taste.
It is mild the moment you put it in your mouth, but the lingering aftertaste and sharpness tell you it is a dry sake.
