Natural Apassimento wine born from experimentation

The name of the wine, Apassimento, means dried in the shade.
As the name suggests, this is an experimental wine made by fermenting grapes that have been dried in the shade and concentrated.

Muscat Bailey A and Neo Muscat are harvested in late September.
The Muscat Bailey A grapes are dried in the shade for two months on the railings of the second floor of the winery, which was formerly a gymnasium, while the Neo Muscat grapes are dried whole in the shade on rice straw owned by Sato Hiroki, a rice creator from Kakuda City.

The original plan was to brew them separately, but because the amount was too small, they were fermented together using two varieties of Muscat Hamburg, which are the same parent.
Any rotten fruit that appears during drying in the shade is selected, and after one month of fermentation in tanks, the juice is extracted using a basket press.
Once the lees were removed, the wine was aged in barrels for a year before being bottled, and then aged for another year in the bottle before being released.

Of course, it has a deep flavor even if you eat it now, but to be honest, the deeper the flavor, the more it will come out if you let it sit for a while.
