[Takasago Yamahai Junmai Dry Unfiltered Raw Sake]

Soft, spicy and refreshing

It has a gentle aroma reminiscent of bananas and a moderately powerful richness.
It has a good balance of umami, spiciness and acidity, and although it has a full-bodied flavor, it is also crisp and won't tire your palate.

・Excerpt from the Fuji Takasago Sake Brewery official website : Our brewery is located just west of Fujinomiya Sengen Taisha Shrine, the head temple of all breweries in Japan.
Our brewery is said to have been founded around 1820 (Bunsei era) by Yamanaka Masayoshi of Hino-cho, Gamo-gun, Shiga Prefecture, and we have heard that the brewery was built at its current location and sake brewing began in 1831 (Tenpo 2).
The brewery's unique features are the gentle, slightly sweet taste of its sake, which comes from the soft Fuji water used for brewing, and the taste brewed using techniques such as "Yamahai-shu" and "Saishukomi" by generations of "Noto Toji Brewers."
The total production volume is about 2500 koku (about 250,000 one-sho bottles), and one-third of the main ingredients are Yamada Nishiki from Hyogo Prefecture, Miyamanishiki from northern Nagano, and Gohyakumangoku from Hokuriku. About 75% of the sake, including Josen, is made under a specific name.
