It features a moderately elegant aroma and a soft taste. It has a soft taste with a slightly lower alcohol content of 14% undiluted sake. The moderate acidity derived from the Kimoto method pairs perfectly not only with Japanese cuisine but also with Western dishes. The cycle of microorganisms brewed using the traditional Kimoto method, without added yeast. The cycle of local production for local consumption, with a focus on ingredients from Ibaraki Prefecture. Cycling, a popular activity in Ibaraki Prefecture. This sake was brewed with the three meanings of sake, Ibaraki Prefecture, and bicycles embodied in the word "cycle." The ancient Kimoto method produces sake packed with natural energy, like a bicycle that moves forward on its own. We highly recommend this sake to those who love bicycles and those who love sake. The label design was created by Kitaro Kosaka, one of Japan's leading animators, who has also directed works for Studio Ghibli.
