This is a pure rice ginjo unprocessed sake brewed using JA Akita's new sake-making rice "Ichihozumi", polished to 55%, Mahorobo yeast, and the kimoto method.
The new variety "Ichihozumi" was only offered to Nabeten among sake breweries outside of Akita Prefecture. In order to explore the compatibility with the brewery and the performance of the rice itself, a small test brewing was conducted under the responsibility of the toji brewer.
A well-balanced sake with a nostalgic feel and just the right amount of ginjo aroma.
This is a sake that can be enjoyed in a variety of ways, whether chilled to suit the lingering heat of summer, or warmed to suit the long autumn nights.
