Uehara Sake Brewery's Furousen Hiyaoroshi was selected as a candidate tank for the first tasting in July.
Finally, the sake is aged appropriately at a tasting in September, and a tank that is expected to age well is selected to be released as that year's hiyaoroshi sake.
It is a lighter type of Furyousen and has a slightly better scent than last year.
The aftertaste is also less acidic.
This is an attractive sake with great potential for the future.
