 This rice, called "Watasen," which has a sense of dynamism to it, is a very precious sake rice grown in Shiga Prefecture, where Kitajima Sake Brewery is located.
 It is the male relative of Yamada-Nishiki and is characterized by its extremely smooth flavor.
The dynamism is clearly apparent in the mouthfeel, but the kimoto brewing process deliberately brings out that dynamism in a taste that is different from the sparkling atmosphere.
 By warming it even more than body temperature, it has a slight sweetness and a pleasant, sharp lactic acidity, making it perfect to enjoy with a meal.
 It goes particularly well with white fish sashimi, grilled fish, yakitori, and other Japanese dishes.
