This is a Junmai Daiginjo sake that combines a mellow flavor with the aroma of unpasteurized sake.
The "Gin no Yume" rice, grown in the terraced fields of the Tosa Reihoku region where the brewery is located, is polished to 50 %.

Moderately fresh fruity aroma.
It has a soft mouthfeel, but has the umami and sweetness of unpasteurized sake, and the bitterness adds depth.
The acidity tightens the overall finish and leaves a smooth, lifting aftertaste.

This is a pure rice daiginjo sake that pairs well with a variety of dishes, such as kamaboko, white fish, cream sauces, and wild vegetable tempura.
