"Odayaka Junmai Ginjo" is pressed in early spring and stored unfiltered at ice temperature.
This is a limited edition product that is slightly different from the seasonal sake Hiyaoroshi.
・Niida Honke Gentle Series
Brewed since 1994 , this sake is made using the kimoto method, and has a beautiful, clear, crisp taste that can be enjoyed with meals. It is made using organic Miyamanishiki, Gohyakumangoku, and Omachi rice, and soft spring water. It is the first sake to receive Fukushima Prefecture brand certification .

About the rice used
■ Protecting the rice fields
Naturally grown rice without the use of pesticides or chemical fertilizers . In addition to growing rice in their own fields, they also contract with eight other groups within the prefecture and two outside the prefecture . They grow rice naturally without fertilizers, returning only what they harvest from the fields, such as rice straw, rice husks, and grass from the banks. They use the Nakano method of weeding and shrimp weeding. Niida Honke Agri Co., Ltd. , an agricultural production corporation , was established on April 25, 2009, and was certified organic ( JAS Organic) on September 14 , 2009 .
■ Protecting Water
They only use natural water from "Takenouchi well water (hard water)" near their own rice fields and "water-free spring water (soft water)" that springs from their own mountain. They also use natural water for washing rice and cleaning tanks. They use equipment that meets strict water quality standards to treat wastewater from washing rice and washing bottles, and they use 95% reusable bottles that can be washed and reused without breaking them. *All products have been tested for radiation.
