We used Yamada Nishiki from Hyogo Prefecture, but this Onakaya, which is the flagship model of a local sake brewery, should also use rice from Yamanashi. Recognizing that this is the ideal state of a sake brewery, the name was changed to Yume Sansui from Yamanashi Prefecture.
Taking pride in our brand name, we spare no effort and time in all brewing processes, from making koji to squeezing.
This Junmai Daiginjo has an elegant fruity aroma, a slightly soft and gentle sweetness, and a fresh aftertaste.
