The rice is polished to less than 60 % and brewed with underground water from the southern foot of Mt. Yatsugatake.
It has a mild aroma and a smooth taste with a strong rice flavor. It goes well with a variety of dishes, regardless of whether they are Japanese, Western or Chinese.

It is said that the taste of sake comes from the rice, the aroma from the yeast, and the mouthfeel from the water.
At Tanizakura, all of the rice used for sake brewing is polished in-house. After that, about 40% (on average) of each grain is removed to remove any impurities that may cause unpleasant flavors in the sake. In addition, the deep well is filled with underground water from the springs on the plateau at the southern foot of the Yatsugatake Mountains. Tanizakura sake is born from the bountiful products of nature and the skill of the brewers.
