The "brewing water" used in sake brewing is soft water (ancient water) pumped up from 200 meters underground on our premises.
Our motto is to make sake that brings out the best in food, and we aim to make sake that does not interfere with your meal. We cherish the umami, acidity and sharpness that spreads when you put it in your mouth, and we brew all of our koji using our original box koji making method, carefully brewing each grain.
