Rare sweet potato shochu made with roasted sweet potato powder!
This is a rare sweet potato shochu made with roasted sweet potato powder, born from a connection between the brewery and a roasted sweet potato processor.
During a visit to the roasted sweet potato processing plant, various sweet potato varieties such as Anno Imo, Beniharuka, Silk Sweet, and Purple Imo were being roasted. They were sold as roasted sweet potatoes or processed into roasted sweet potato powder.
During the pulverization process, the potatoes are sieved through a fine mesh, but any remaining potato was reportedly discarded or used as animal feed.
However, that roasted sweet potato powder, leftover from the sieving process, is still excellent sweet potato. This shochu was born from the idea of whether it could be used to make shochu.
It offers a multi-layered sweet aroma and flavor derived from roasted sweet potato powder, made from seven types of sweet potatoes. The use of yellow koji, primarily used in sake brewing, complements these with ginjo aroma.
While the term "roasted sweet potato" might suggest a roasted aroma, this particular brewing process does not yield a prominent roasted aroma. Instead, you can enjoy the sweet aroma and flavor of steamed potatoes made from various sweet potatoes.
Please enjoy it slowly on the rocks or with water.
*Due to ingredient procurement, some regular Beniharuka sweet potatoes are also used.
