[Kame no Umi Junmai Daiginjo Kinmon-nishiki Ice-aged Terroir Gorobei Premium Cuvee]
Supreme elegance crafted from carefully selected Kinmon-nishiki rice
Since 2000, Tsuchiya Sake Brewery has been dedicated to cultivating sake rice in the Gorobee-shinden area of Asashina, Saku City. This exclusive, meticulously crafted sake is brewed using only the finest quality rice harvested from that year's crop.
We use "Kinmon-nishiki," a sake rice that is the pride of Nagano Prefecture. Polished down to 39%, the rice is brewed by bringing together the full expertise of our brewers.
The pressed sake is then stored in bottles and aged slowly for one year in an ice-cold environment of -7°C.
This lengthy maturation process results in a smooth, mellow mouthfeel and a rich, complex depth of flavor.
A sophisticated, elegant aroma rises from the glass.
On the palate, it unfolds with a rich umami that balances delicacy and body, leading into a long, graceful finish.
A special bottle woven from the terroir of Gorobee-shinden and the brewery's craftsmanship.
Enjoy its profound charm at a leisurely pace, perhaps paired with dried fruits or nuts.
・About Tsuchiya Sake Brewery
Founded in 1900, the name "Kame no Umi" (Sea of Turtles) was derived from "Kiju Fukukai," a phrase meaning "truly auspicious," with the wish that the sake would be served at joyous celebrations.
Using the underflow water of the Chikuma River and sake rice from the Saku Plain, we continue to brew mellow local sake in our historic wooden brewery.
