This is a dry junmai that is not just spicy, but also emphasizes the elegance and smartness characteristic of Hitachi Nishiki.
Although it undergoes bottle pasteurization, upon opening, a fine fizz can be heard. The aroma is subdued, and from the first sip, you'll feel a light sensation, followed by a sharp, quick surge of dryness emerging from a subtle sweetness, culminating in a refreshing finish.
It pairs well not only with Japanese cuisine such as fresh seafood, but also with meat dishes like roast beef, and oily dishes such as happosai and agedashi tofu.
