[Okuroku Tokubetsu Junmai Yamahai Turtle]

The Toji's most recommended bottle of "Okuroku" for this year.

This is a limited edition sake from "Okuroku" that expresses a flavor cultivated over time, much like a turtle slowly accumulating years.
For the rice, we use "Kame no O" from Kanegasaki Town, Iwate Prefecture, which we have been contract-cultivating for about 30 years.

Built upon the robustness unique to the Yamahai brewing method, it unfurls with a refreshing acidity reminiscent of white grapes, followed by a firm body and deep umami.
The finish offers a pleasant, soft astringency that beautifully tightens the entire flavor profile.

While possessing a rich umami, the aftertaste is surprisingly sharp.
It is a highly refined sake that perfectly balances drinkability and crispness.

This confident creation, particularly recommended by the Toji among this year's "Okuroku," masterfully harmonizes the unique flavor of Kame no O with the power of the Yamahai brewing method.
Please savor its profound charm as you enjoy it slowly.

Okuroku is a brand launched by Iwate Meijo in Oshu City, Iwate Prefecture, as a limited brand for exclusive retailers, after approximately five years of experimental brewing.
All ingredients are Iwate-grown rice, and the focus is on creating a food-pairing sake with a balance of sweetness and acidity.
It is an exclusive brand for retailers that continues to challenge itself by returning to the origins of sake brewing.
