Primarily MBA harvested in September 2025. Fermented and aged for approximately 2 weeks in MC, then for approximately 4 months in medium and small barrels.
A slightly reddish azuki bean color.
A flamboyant aroma of mulberry, jasmine, and acacia, with nuances of melon, pear, and ripe lemon. Furthermore, tomato, mint, and a faint toasted aroma intricately intertwine.
The palate is smooth, with a fruitiness of melon and banana, and a pleasant slight effervescence spreading across the tongue.
The flavor has substantial volume, with spices like cinnamon and nutmeg, the richness of cashew nuts and almonds, and the sweetness of dried apricots and a hint of honey.
The finish offers a lingering hazelnut-like aroma and gentle sweetness.
Even when well-chilled, the aroma and flavor can be fully enjoyed. While narrow glasses enhance the aroma, it is also recommended to leisurely enjoy it in a tumbler.
It pairs well with a wide range of Chinese dishes, from green pepper steak to chili shrimp. It also goes well with dried snacks like jerky and dried filefish with mirin.
