[Minami x Curve Dodge Winery FUSION 2022 Deep & Silent]

The wine barrels used to age red wine ( using Cabernet Sauvignon ) from Niigata Prefecture's Curve Dodge Winery were sent to Minami Sake Brewery, which produces the famous sake " Minami " in Kochi Prefecture, and were aged for 205 days in Junmai Daiginjo made with Hattanishiki.

A pale yellow color with a hint of pink.
The scent is gentle, deep and quiet, with notes of ripe pine, pear, and raisins, and rather than the sweet scent of oak, it has a scent of withered wood.

It has a gentle mouthfeel, a crisp impression reminiscent of minerals and stones, and a rich flavor.
The impression is that it is a dry and quiet men's sake characterized by the smoothness derived from the barrel and the firm acidity that appears in the latter half.
